Day 16! I started the day with my favorite egg-o-cado breakfast and a workout DVD. Sleeping well, eating well, and newfound energy are helping me find the motivation I lost.
Another revelation? Lisa. Can. Cook. Or at least follow a recipe. 😉 I’m also getting used to cooking meat at 9am. Today I tried a recipe for barbacoa beef, similar to Chiptole. This recipe was EASY! Finding chipotle peppers in adobo that were Whole30-approved proved difficult (seriously, added sugar), so I subbed chiptole powder. I browned the meat in ghee but it smelled so good it was worth the burning pinpricks from a spattering pan, even at 9am.
Meal 2: frittata with sautéed spinach & mushrooms, bacon, and fresh tomatoes.
Meal 3: barbacoa beef in lettuce wraps with sliced avocado and salsa
Random musing: butter lettuce may sound delicious but doesn’t taste like butter at all. Also, it isn’t too good for wrapping. I preferred romaine.
